ANSWER: A good-quality
wine will give the same fine flavor to a dish as a
premium wine or expensive wine. Save the premium
wine to serve with the meal. Remember - only use
wines in cooking that you would enjoy drinking.
QUESTION: What
is "cooking sherry?"
ANSWER:
Cooking sherry usually has salt or chemicals
added to make it unpalatable as a sipping wine. Sold
in small bottles, it is generally more expensive
than regular sherry. I do not recommend using
anything labeled "cooking wine."
QUESTION: Will
wine in food make me tipsy?
ANSWER: No. The alcohol in
wine begins to evaporate at 172 degrees - well short
of the boiling point of water. Even people who avoid
drinking wine for religious or personal reasons can
cook with wine.
QUESTION: Can I
use leftover wine for cooking?
ANSWER: Yes. To save
leftover wine for cooking, pour into smaller
bottles, cork tightly and store in the refrigerator.
QUESTION:
How much wine should I use in a recipe when
cooking?
ANSWER: This question
depends upon the flavor intensity of the wine and
the foods you are cooking. Proceed slowly in adding
additional wine than the recipe calls for. Wine
needs time to impart its flavor. If you're not sure
whether to add more wine to a dish, let the dish
cook at least ten minutes before tasting again.
Adding more wine than the recipe calls for won't
necessarily make it better. Wine does not
automatically turn an ordinary dish into a gourmet
dish. Use it with discretion.
Suggested amounts to add:
Soups - 2 tablespoons per cup
Sauces - 1 tablespoon per cup
Gravies - 2 tablespoons per cup
Stews & Meats - 1/4 cup per pound
Poaching liquid for fish - 1/2 cup per quart

Cooking with wine can be a pleasure and an
enhancement to good food and a fine meal!
When wine is heated, the alcoholic content as well
as sulfites disappears, leaving only the essence imparting a subtle
flavor.
Wine
Selection:
The first and most important rule: Use only wines in your cooking that
you would drink. Never, never use any wine that you
WOULD NOT DRINK! If your do not like the taste of a wine, you
will not like the dish you choose to use it in.
Do not use the
so-called "cooking wines!" These wine are typically salty
and include other additives that my affect the taste of your chosen dish
and menu.
The process of cooking/reducing will bring out the
worst in an inferior wine. Please promise yourself never, never
to stoop to such a product! Linda's rule of thumb is: I do not
cook with something I will not drink.
An expensive wine is not
necessary, although a cheap wine will not bring out the best
characteristics of your dish. A good quality wine, that you enjoy, will
provide the same flavor to a dish as a premium wine. Save the premium
wine to serve with the meal.
How
to cook with
wine:
Wine has three main uses in the kitchen -
as a marinade ingredient, as a cooking liquid, and as a flavoring in a
finished dish. The function of wine in cooking is to intensify, enhance
and accent the flavor and aroma of food - not to mask the flavor of what
you are cooking but rather to fortify it. As with any seasoning used in
cooking, care should be taken in the amount of wine used - too little is
inconsequential and too much will be overpowering. Neither extreme is
desirable. A small quantity of wine will enhance the flavor of the dish.
The alcohol in the wine evaporates while
the food is cooking, and only the flavor remains. Boiling down wine
concentrates the flavor, including acidity and sweetness. Be careful not
to use too much wine as the flavor could overpower your dish.
For best results, wine
should not be added to a dish just before serving. The wine should
simmer with the food, or sauce, to enhance the flavor of the dish. If
added late in the preparation, it could impart a harsh quality.
It should simmer with the food or in the
sauce while it is being cooked; as the wine cooks, it reduces and
becomes an extract which flavors. Wine added too late in the preparation
will give a harsh quality to the dish. A wine needs
time to impart its flavor in your dish. Wait 10 minutes or more to taste
before adding more wine.
Remember that wine does not belong in
every dish. More than one wine-based sauce in a single meal can be
monotonous. Use wine is cooking only when it has something to contribute
to the finished dish.
Sulfites in Wine
- All wines contain at least some small amount of sulfites. They are a
natural result of the same fermentation process that turns grape juice
into alcohol. Even wines that have not had any sulfites added during the
winemaking process contain some amount of sulfites. Sulfur dioxide (SO2)
is used by winemakers to keep freshly pressed must from spoiling. It
keeps down the activities of native yeast and bacteria and preserves the
freshness of the wine.
When cooking with wine containing
sulfites, you do not concentrate them as you would flavor, but rather
they evaporate like alcohol. The sulfite goes through a conversion in
the liquid of the wine to produce sulfur dioxide. This is actually the
compound that prevents the oxidation. It also is a gas, and when
subjected to heat, it dissipates into the air. All that remains is some
salts, but they are so minute in quantity that they have no affect on
flavor.
Storage of Leftover
Wine -
Leftover table wine can be refrigerated
and used for cooking if held for only one or two weeks. If you have at
least a half bottle on wine left over, pour it off into a clean half
bottle, cork it, and store in the refrigerator. without air space at the
top, the rebottled wine will keep for up to one month.
Wine Reduction for Pan
Sauces:
1/2 to 3/4 cup raw wine = 2 tablespoons of
wine reduction
For ultimate flavor, wine should be
reduced slowly over low heat. This method takes more time and effort,
but will achieve a superior sauce because the flavor compounds present
in the wine are better preserved.

To me, the term cooking wine has two meanings: There's the wine you put in a dish, and?equally as important?the wine you sip
while you cook. I think there's no better way to spend an evening than concocting a delicious dish while sipping a good wine
for inspiration.
It's easy to find a good wine to drink while you cook?in fact, it's often easier than knowing which wine to cook with. That's
because when listed as an ingredient, wine is often suggested in the most generic terms. When a recipe says, "1 cup dry white
wine," you're left to wonder: "Will anything from $5 to $25 do?" and "Can the recipe yield equally flavorful results with
either a California Chardonnay or French Sancerre?"
Here are guidelines to help you make the best pick. If a recipe calls for dry white wine, the best all-around choice is a quality American Sauvignon Blanc.This wine will be very dry and offer a fresh light herbal tilt that will enhance nearly any dish.
If the dish has bold or spicy flavors, go for a more aromatic white wine.Gewurztraminer, Riesling, and Viognier all have dynamic fruity flavors and exotic floral aromas that counterbalance heavily
spiced dishes.
If a recipe calls for dry red wine, consider the heartiness of the dish.A long-simmered leg of lamb or beef roast calls for a correspondingly hearty wine, such as a Petite Syrah or a Zinfandel.
A lighter dish might call for a less powerful red?think Pinot Noir or Chianti.
Get to know Port, Sherry, Madeira, and Marsala.These are among the best wines good cooks can have on hand. They pack the most intense flavors and?because they're fortified
with a little more alcohol than table wine?have the longest life on the pantry shelf.
Avoid using cooking wines.Clearly there are far better choices than so-called "cooking Sherry" or other liquids commonly billed as "cooking wine." These
are made of a thin, cheap base wine to which salt and food coloring have been added.
Never cook with a wine you wouldn't drink.A poor quality wine with sour or bitter flavors will only contribute those flavors to the dish. Julia Child once said, "If
you do not have a good wine to use, it is far better to omit it, for a poor one can spoil a simple dish and utterly debase
a noble one." It's worth the investment to buy a quality wine. Just don't forget to sip a little as you stir.
What Happens to the Alcohol?Conventional wisdom holds that after a few minutes of cooking, the alcohol in wine evaporates. That's not exactly the case.
Research from the USDA shows that 85 percent of the alcohol remains after wine is added to a boiling liquid and then removed
from the heat. The longer a dish is cooked, however, the less alcohol remains. If a food is baked or simmered 15 minutes,
40 percent of the alcohol will remain; after one hour, only 25 percent remains; after 2 1/2 hours, just 5 percent. But since
wine does not have a large amount of alcohol to begin with (generally 12 to 14 percent), the final amount of alcohol in a
dish is not a problem for most people.

The topic that almost never arises: what wine to put in dinner. The use of wine as an ingredient is usually controlled by only a couple factors: white or red and what's open in the fridge. But there is more to cooking with wine than using up last night's leftovers. Wine is a complex beverage and it's use in cooking has many implications. Where does the flavor come from and how will it affect my recipe? What about the alcohol? Just how do I incorporate wine into my cooking repetoire? Well, here is a layman's primer on the chemistry of wine and food. This should be able to provide some basic answers to questions regarding wine and food. What components of wine add flavor, what happens to the alcohol and what sulfites have to do with anything. Also, how to choose a wine to cook with (besides just using up that bottle in the back of the fridge), how to cook with it and what you can expect for results. Finally, a little discussion on the implications of using wine in food—for our children, our religion and our general health. Cooking
with wine began with the Greeks and Romans and was an equal favorite
of cooks in the Middle Ages. It
remained a popular practice well into the 17th century England,
when it was merrily transported to Colonial America. Today,
cooking with wine is an easy way to add a 'kick' to otherwise
ordinary, everyday dishes and adds a nuanced, sophisticated flavor
that's difficult to arrive at by just adding a favorite herb or
spice. Adding
white wine to
any chicken or fish dish help to keep it moist while cooking.
Red wine also
brings out the flavor in meat dishes, and is a common ingredient
in marinades. In fact, any dish you're making will probably benefit
from a splash of wine. For certain cakes, sherry is an ingredient
that adds a heady flavor while helping to lighten its
texture. As
food author Morrison Wood once famously said, "It is,
of course, entirely possible to cook without using wine. It is
also possible to wear suits and dresses made out of gunny sacks,
but who wants to?" For

Many of the Italian recipes you will learn and prepare in our hands-on cooking courses have been in Tuscan families for generations, and are cooked with the same Italian flair and love of family, friends and good wines as Carlo Innocenti?s great, great grandmother did in her own Tuscan country cucina. All the produce used in this Italian regional cooking course is organically grown; you will never see the inside of a supermarket or taste a store-bought tomato on one of our cooking and cultural tours! All foods are personally selected farm fresh from local farmers and open air markets by our Tuscan chefs. Our chef will personally escort you to the market and teach you how to select the freshest, most flavorful Tuscan foods available, the first lesson in fine Italian cooking. FINE ITALIAN WINES Tuscany is also home to some of the finest Italian wines in existence, including the rare and incomparable Nobile di Montepulciano, Brunello di Montalcino, and of course, the famous and breathtakingly beautiful Chianti wines and Chianti wine region.

in our local cuisine, using my lifetime of experience in
restaurants and hospitality.” Now, Tuscan Way has
provided Thousands of visitors with a unique and rare opportunity
to live and experience life, as it really is, in Southern
Tuscany, Italy. Tuscan Way specializes in culinary vacations,
wine tours and custom designed holidays. Recently, Tuscan

towns in Tuscany, away from places crowded with tourists,
